Ingredients
- 1 cup cooked farro or brown rice
- 1 cup steamed broccoli florets
- 1/2 cup shredded carrots
- 1/2 cup snap peas, halved

- 2 tbsp chopped parsley or cilantro
- 1 tbsp olive oil
- 1 tbsp lemon juice
- Salt & pepper to taste
