Nothing says summer quite like a glass of fresh raspberry lemonade. This simple concentrate keeps beautifully in the refrigerator and makes entertaining, picnics, or afternoon porch sitting effortless.
Best of all, it uses simple ingredients and tastes far better than anything from the store.
Ingredients
- 4 cups fresh raspberries
- 2 cups freshly squeezed lemon juice (about 8–10 lemons)
- 1 to 1½ cups local honey (adjust to taste)
- 2 cups water
Instructions
- In a saucepan, combine the raspberries and water.
- Simmer for 8–10 minutes until the berries soften and release their juices.
- Mash gently with a spoon.
- Pour through a fine mesh strainer, pressing out as much juice as possible.
- Return the juice to the saucepan and stir in the sugar until dissolved.
- Remove from heat and allow to cool.
- Stir in the fresh lemon juice.
- Store in a sealed glass jar in the refrigerator for up to one week.
To Serve
Mix one part concentrate with one to two parts cold water or sparkling water, depending on your preference.
Serve over ice with fresh raspberries, lemon slices, and sprigs of mint.
