Easy Lemon Coconut Scones – A Bright & Buttery Spring Recipe

Ingredients

2 cups all-purpose flour
? cup sugar
1 tablespoon baking powder
½ teaspoon salt

½ cup cold unsalted butter, cubed

1 tablespoon fresh lemon zest
2 tablespoons fresh lemon juice

½ cup shredded coconut (sweetened or unsweetened)

¾ cup heavy cream

1 teaspoon vanilla extract

Optional: coarse sugar for topping


Instructions

1. Preheat the oven
Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.

2. Mix dry ingredients
In a large bowl whisk together flour, sugar, baking powder, and salt.

3. Cut in the butter
Add the cold butter and cut into the flour mixture using a pastry cutter or fingertips until it resembles coarse crumbs.

4. Add flavor
Stir in the lemon zest and shredded coconut.

5. Mix wet ingredients
In a separate bowl combine the cream, lemon juice, and vanilla.

6. Combine
Pour wet ingredients into dry ingredients and stir until just combined. Avoid overmixing.

7. Shape the dough
Turn the dough onto a lightly floured surface and gently form into a circle about 1 inch thick. Cut into 8 wedges.

8. Bake
Place on baking sheet and sprinkle lightly with coarse sugar if desired. Bake 15–18 minutes, until lightly golden.


Optional Lemon Coconut Glaze

For a slightly sweet finish:

1 cup powdered sugar
1–2 tablespoons lemon juice
1 tablespoon coconut milk (optional)

Drizzle over cooled scones and sprinkle lightly with coconut.
