These baked oatmeal cups came together on a day when I wanted something easy, protein-rich, and supportive — something that felt both grounding and energizing.
They are lightly sweet from banana, gently spiced with cinnamon, and balanced with protein and peanut butter for staying power.
Perfect for breakfast, a mid-afternoon snack, or something steady before teaching or recording.
Ingredients
- 2 ripe bananas, mashed
- 2 cups old-fashioned oats
- 2 eggs
- 1 scoop Naked Whey protein powder (vanilla)
- 1 cup unsweetened almond milk
- 2 tablespoons powdered peanut butter
- 1 teaspoon cinnamon
- ¼ cup mini chocolate chips
- unsweetened coconut flakes to sprinkle on top
Instructions
- Preheat oven to 350°F.
- Line or lightly grease a muffin tin.
- In a large bowl, mash the bananas until smooth.
- Add eggs and whisk until fully combined.
- Stir in almond milk, protein powder, powdered peanut butter, and cinnamon.
- Fold in oats and mini chocolate chips.
- Divide evenly into muffin cups, filling each about ¾ full.
- Bake for 18–22 minutes, or until set and lightly golden.
- Allow to cool for 5–10 minutes before removing.
Makes approximately 10–12 oatmeal cups.
