Paleo Chili

A snowy day means a big pot of chili to simmer all day.  Here is my paleo version of a classic.

1 pound of grass-fed bison

1 pound of grass-fed beef

1 small yellow onion diced

1 large can of crushed fire roasted tomatoes

1 large can of diced fire roasted tomatoes

1 cup of water

1 small can diced green chile

2 garlic cloves

3 tablespoons tomato paste

3 tablespoons of chili powder

2 tablespoons of cumin

dash of hot sauce

Directions:

Brown both types of meat in skillet.  When fully cooked transfer to a crock pot.  Using the same pan sauté onions in grass-fed butter until carmelized, add garlic.  Add tomato paste and water and combine and add to crock pot. Toss everything else in the crock pot and cook on low for 6-8 hours.
